I think everyone needs to have a handful of easy, go to recipes in the arsenal they can depend on to satisfy the taste buds. Today’s featured recipe is exactly that. This hummus recipe is great for snacking with veggies, using in veggie wraps or today we are using it in place of cheese in a quesadilla. These hummus quesadillas are so good and so much better for you than the cheese based version (dairy or non-dairy).
This recipe was created by Dreena Burton, in her “Plant-Powered Families” recipe book. This hummus is so easy to puree in a food processor and have at the ready for whatever use you have planned. We usually have all of the ingredients on hand which makes it even easier.
For the quesadilla, have fun with whatever veggies you enjoy most! This time we filled it with some swiss chard from the garden, red bell peppers, tomatoes and corn. We then served it with a side of quinoa and our favorite salsa. Super easy and a great way to sneak in some veggies into the diet for our boys 🙂
